Mango and Chia Pudding

A fresh and sweet breakfast to start your day!



Have you exhausted all options of cereal, smoothie bowls and even overnight oats? Worry not, because chia puddings are the next best thing!


So fresh and easy to make this mango and chia pudding is perfect for breakfast or as an afternoon snack and it will have you feeling like it's summer. And the best thing is that it keeps well in the fridge for a couple of days so you can make it ahead for that morning rush!


makes: 2 portions preparation: 10 minutes total time: 20 minutes


Ingredients:

  • 1cup milk (of any kind)

  • 3tbsp chia seeds

  • 2tbsp honey

  • 1 mango diced


Method:

  1. Mix the milk, chia seeds and half of the honey in a bowl. Cover and refrigerate for at least one hour

  2. Blend together the mango and the rest of the honey until you have a purée of your preferred consistency

  3. Spoon half of the chia pudding into two glasses. Cover with half of the mango purée. Add the rest of the chia pudding on top of the mango purée. Finish with the rest of the mango purée on top. It should be chia pudding, mango purée, chia pudding, mango purée!
